We asked him to exclusively reimagine a classic cocktail using sake from Asahi Shuzo — our favorite brewery in Japan and makes of world renowned Dassai sake. Instead of reaching for the premium junmai daiginjo grade Dassai Beyond (rrp $750), Jabin opted for the less refined nama grade Dassai 39 (rrp $30) with its more robust and full-bodied profile that is better suited to cocktails.
‘For DITA’s Sake’ is the resulting drink; a contemporary and heady update on a classic Manhattan with whiskey and maraschino cherry liqueur key notes alongside the sweet honey-like notes of the sake.
1.75oz Dassai 39 Sake
.75oz Blackened Whiskey
.50oz Carpano Antica Vermouth
.25oz Maraschino Liqueur
Two dashes Cherry Vanilla Bark Bitters Two Maraschino cherries
Add all the ingredients to a mixing glass filled with ice. Stir to mix the spirits. Strain into a rocks glass over a single large ice cube. Garnish with two Maraschino cherries.
I love timeless classics. I still wear a pair of DITA sunglasses that I bought 15 years ago. It’s the same with cocktails. How long have people been drinking Old Fashioneds or Manhattans? They're timeless.
When you can play around with the ingredients you can create a modern take on a classic and it feels like you are enjoying a whole new cocktail. But at it’s core, it’s still that timeless cocktail that’s been enjoyed for decades.
